The feel of late autumn is upon us and so concludes the bountiful supply of local fresh produce…maybe in your garden, but not for the farmers at your local Saratoga Farmers’ Market!
Thanks to technological advances in green houses the market is still full of fresh locally grown vegetables and will be for some time. The flavor due to freshness of product for this Chicken with Tomato dish makes it a delightful, warm, savory dinner for an autumn night. This recipe comes from the kitchen of Becky from Shushan Valley Hydroponics Farm, a tomato vendor at the farmers’ market. * Chicken and Tomato with Cheese Ingredients Fresh boneless chicken cut into small strips (for the best flavor get fresh chicken from Saratoga Farmers’ Market Vendors: S&A Farm or Brookside Farm) Blue Moon Caliente or Honeymoon Marinade (Both marinades are found at the Saratoga Farmers’ Market and contain honey, which provides a nice glazing to the chicken. The Caliente will give a southwestern flare to the dish, the Honeymoon a slight sweetness.) 2 Tomatoes, fresh, diced 1-2 Green peppers, fresh, diced 1 onion, fresh, diced 1/2-1 C Mozzarella Cheese or Saratoga Sunflower Cheese, shredded (At present the market does not have fresh mozzarella, but the Saratoga Sunflower cheese from Homestead Artisans melts nicely and will give a mild cheddar type flavor instead of the mild mozzarella.) 1 Tbsp. Margarine Basil (optional) Directions Cut up chicken into thin strips. Marinate with enough Blue Moon Marinade to cover chicken strips and marinate for ? hour to over night. When ready, drain off marinade and cook chicken with margarine in a large frying pan. Start hot and sear the chicken then turn down temperature to medium and add the diced tomatoes, green pepper and onion. Cook, stirring the ingredients, until veggies are tender. Add small amount of basil during cooking, if desired. Once vegetables are tender and chicken is fully cooked, sprinkle cheese on top. Serve at once. *Becky recommends serving this dish over pasta with a spoonful of sour cream on top.
