Each week I will share ideas, tips, and/or recipes for food and entertaining that include simple ingredients that you can get at any grocery, discount, or craft store. This is the Jackie Oh style: class with little cash. For 21 years, The Husband has teased that I always have to have “a theme…with trinkets!” Okay, maybe he’s right. But it’s a fun way for me to express myself. You can too. A few weeks ago, The Girls (including, get this, the spoiled rotten teenage love of our life girl child—Dad’s nickname for her! A 17- year-old who will still occasionally hang out with Mom and her friends? PRICELESS!) and I took a trip to Hick’s Orchard to apple pick. Here is an easy and tasty recipe for apple crisp to warm you and your loved ones. Enjoy! And remember, you’re alive; therefore, every day is an event! Have a delicious week! • 4 medium tart cooking apples (Macs or Granny Smith work well), sliced (about 4 cups) • 3/4 cup packed brown sugar (light or dark is fine) • 1/2 cup all-purpose flour • 1/2 cup quick-cooking or old-fashioned oats • 1/3 cup butter, softened • 3/4 teaspoon ground cinnamon • 3/4 teaspoon ground nutmeg • Whipped cream or vanilla ice cream, if desired Heat oven to 375 degrees. Grease bottom and sides of an 8” pan, casserole dish, or pie dish with butter or spray. Spread apples in dish. In a medium bowl, stir remaining ingredients until well mixed. Sprinkle over the apples. Bake about 30 minutes or until topping is golden brown and apples are tender when pierced with a fork. Serve warm with cream or Vanilla ice cream |
