When Rachel St. Martin and her husband, Joe, were first dating, he would bring her cupcakes from various shops around New York City where they lived until last year.
“There was always something new to try and we would play around and bake and make our own creations and it was kind of like, how we fell in love.” Rachel St. Martin, owner of Spa City Cupcakes, said. The business opened last Thursday (June 26). “I love the idea of cupcakes, because they’re so fun,” St. Martin added. “I mean, it is a new trend too. You can do any flavor, and there is always something new to do with them.” Rachel explained her inspiration to open her own business this way, “I was working in public relations, and one day I just woke up and I was like, I don’t want to do this anymore. I worked remotely from here (Saratoga Springs) and the company was in New York City and they wanted me to start coming in…a lot. And I just said to Joe, I don’t want to work that hard for something that I don’t love. I didn’t want to be away from my family that much. I want to be happy everyday.” After looking at many locations for her business, some that were just too expensive and some that were just “not right,” St. Martin found her current location in the Downstreet Market Place somewhat serendipitously - she and her husband happened to be taking a short cut through the place en route to their car and saw the place empty and available. “We saw this space and we were like, perfect, gray and nothing in it but we both said, we can do it here, this will work, this will be perfect. Luckily we were right.” On Rachel’s opening day she opened the shop at 11 a.m. and by 3 p.m. had sold every single cupcake. “I called my husband and told him I didn’t know what to do.” In fact Rachel has sold out every single day since opening. Rachel and her husband are expecting their first child this October and Rachel contributes her non-stop energy to the pregnancy itself, “I have more energy now than before I was pregnant. “People come in the morning before we open and they just want to see what you’re doing.” Rachel wants people to feel free to come in and watch her bake. “I want people to see where everything is coming from; I’m here, making everything from real ingredients. Rachel uses butter in all but one kind of cupcake (red velvet). Spa City Cupcakes will soon be delivering around town and will have a stand set up on Open House Day at Saratoga Race Course on Sunday, July 20. Spa City Cupcakes is open every day except Monday. The hours are 11 a.m. - 7 p.m. (extended hours during summer). Spa City Cupcakes will soon offer birthday parties where kids can make their own cupcakes and perhaps create their own signature cupcake. In the winter, St. Martin will also be offering baking classes for kids. Spa City Cupcakes currently offers 18 different flavors with the classic Vanilla Cream, an Elvis inspired banana and peanut butter frosting cupcake and Key Lime flavor just to a name a few.
